I saw your comments about the rainfall in South Australia, and wondered if South Australia uses irrigation? I have heard that in Europe to be classified as “true” terroir, grapes have to be grown without irrigation, and must rely on natural rainfall. If this isn’t the case in South Australia, does irrigation significantly affect terroir, and does this diminish the wine’s quality? <br /><br />Last week I shared a bottle of Majella 2010 Shiraz, and it was quite bland, despite the shoe polish and sharpened pencil taste of the region, until the next day, when it had had time to breathe, and then the true Coonawarra character came out —spicy and peppery. That sounds EXHAUSTING. After a full day of tasting at a few wineries (spitting every time, of course), I am as fatigued as having worked a full shift on the tools. It is a totally different experience tasting wines and paying close attention and consideration to every aspect of the taste, smell, mouthfeel etc compared to just kicking back with a familiar favourite that i can enjoy and lose myself in and not think consciously about.<br /><br />I guess some people might look at the job of 'professional wine taster' and get bright eyed about how fantastic that sounds but I just wonder how on Earth you do it for a living, day in and day out?<br /><br />Thank you so much for the effort that goes in to your reviews and tasting notes.<br /><br />I'm only 25 and just a few years in to my wine appreciation journey and only now coming to grips with the qualities i consistently like in a wine. It depends what kind of wine...Ay, there is the rub! It depends what kind of wines you are marketing, if you are to market relatively cheap ones to the mass of people or finer ones to “connaisseurs”. The trouble when it comes to Burgundy is that there is practically no bulk wine made (or even very ordinary for that matter). Those familiar with Burgundy know that it is a somewhat difficult task to find the small makers and to avoid the negociants . Rarely the wineries have cellar doors and you have trouble to approach the wineries even if your French is fluent, so if you are interested in Burgundy wines and go there you are to meet difficulties mostly endning up with negociants. I have myself been very lucky indeed, being at the right places at the right moments, so I have had some wonderful experiences; one tasting wine with Mr Tortochot in Gévrey-Chambertin and on another occasion visiting his underground cellars that he very rarely shows to someone. He once told me: “My wines are so good so they don’t need marketing”.<br />Australia is another matter, bulk wine being made in most regions, so maybe marketing could be done regionally, even if wineries are mostly small. My knowledge being a Swede is somewhat restricted as I have only visited Coonawarra, Barossa, Canberra, Geelong and Yarra. I was going to do my thesis on it, but to be proper scientific it would have taken too much time and money..least of all the hundred bottles of wine i needed. Takeaway points; listen to Peynaud- wine doesnt need oxygen ingress to age right, bad winemaking not stelvin/screwcaps are causal of reductive odours and maybe.. cork is just what you're used to - get over it, cork is dead. <br />now about 'accelerated ageing due to suboptimal storage conditions and its role in positively altering wine constitution'..theres a thesis up for grabs 4th years.
